Pork with Mango


Mango and pork compliment each other nicely in this recipe.

SERVES: 2
PREP TIME: 10 Minutes
COOK TIME: 5 Minutes

Ingredients

1 tbsp. soy sauce
2 tbsp. barbecue sauce
2 tsp. brown sugar
1 tbsp. oil
1/2 lb. pork tenderloin, sliced 1/4 inch thick
1 whole sweet red pepper, chopped
1 whole mango, peeled and chopped

Directions

	Step 1: Combine the soy sauce, barbecue sauce, and brown sugar in a small bowl.

	Step 2: Heat the oil in a frying pan. Add the pork and pepper. Stir to cook, about 3 minutes Add the mango and sauce. Cook 1 minute to heat through. Serve over rice.
